Howdy All!
Yes, I'm a transplant from the South, born and raised on biscuits & gravy with a hint of Italian from my fathers' side. Most of my family are still in the New Orleans area, home to some of the best food on the planet! I prefer to try and mix a little cajun flavour into anything I'm cooking, though my wife's pallette won't allow me to get too crazy with the cayenne pepper! I also like a little red wine or ice cold beer with almost anything, unlike our gracious hosts' who prefer the McCallan as an appetizer! I look forward to reading more posts concerning Southern cooking, though I'm aware it's not necessarily the healthiest of menus, I find it to be as diverse as the people who grace that region. Have a great day, and don't forget to do something nice for someone today, even a pet! Thanks for the forum guys...I'll be a regular!

Thanks for all the warm "Welcomes"! Been busy with the holiday and all, but was able to squeeze in a batch of red beans and rice for a pot luck. 'Came out pretty good, partly due to a hot sauce and seasoning my Mom sent from N'awlins called "Slap 'Ya Mamma" (I swear!) and plenty of ice cold beverages to wash it down with!
