Fleur, Mandaly Bay, Las Vegas
Well I went back down to Vegas again few months ago for more production on Secrets of the Chef. There are other picks I’ll share of the production but first I thought you might like a peak at one of the top ten meals I’ve had in my life. This dinner was at Chef Hubert’s restaurant in Mandalay Bay. http://www.mandalaybay.com/dining/fleur.aspx

Course the first

crab & avocado sphere watermelon gazpacho 9$

tuna tacos jalapeño, lime cilantro 10$

Kushi oysters margarita sorbet, e purée 9$

smoked salmon crustini egg,
pumpernickel, red onion, green goddes sauce 8$
no pic, it went to fast.

Course the second

satlantic halibut cheeks wild mushroom & parsnip stew 12$

Filo wrapped shrimp bananacurry compote 17$

skirt steak chimmichurri, roasted fingerling, crème fraiche 15$

Course the third

lasagna “verrine” pork, beef, fontina, mozzarella, reggiano 10$

onion soup veloutte, truffle oil 6$

I attempted a recreation of this because it was just so good. It came out very well I just didn’t have the truffel oil but that didn’t hinder it to much. It’s very easy. Sauté half a fine diced sweet onion with a little salt until well caramelized, add some fesh chopped garlic towards the end of the sauté, add a pint of heavy cream and a little white pepper, warm through, don’t boil. Pour into a blender and whiz. Strain it if you want, I like the little onion bits.

angus sliders blu cheese, onion, bacon, pear 10$

risotto scallion, lemon, basil 8$
maple glazed pork ribs smoked to order 12$
these went fast too.

Desert

crème brulée trio earl grey, Lavender (I had to),cookie dough 6$

I wasn’t fast enough for these either.

safforgatto a la LN₂ served tableside baileys ice cream, espresso 15$
hit the ten image limit
Take these ingredients, Baileys, cream, espresso, and put them in a bowl. Start whisking and add liquid nitrogen. Ice cream in seconds!
It really was one of the best meals I’ve ever had.
