Lavender Simple Syrup

Lavender Simple Syrup
Lavender Syrup:

1 cup of Water
1/2 cup super-fine white sugar
1/4 cup Lavender dried*

In a saucepan bring the ingredients to a boil, then reduce and simmer for about 10 minutes.
Use a fine sieve and place over a sterilized canning jar, carefully pour in the liquid cover and refrigerate until needed.

Blueberry Lavender Mojito--
10- 15 Mint Leaves
1 ounce of the Lavender Syrup
1/2 of Lime -juiced
15-20 Blueberries
1 1/2 ounces of a White Rum
Crushed Ice
Club Soda

In a tall glass muddle the mint leaves, lime juice, blueberries, rum and the syrup until the flavors are just combined.
Try not to over muddle.
Fill the glass with crushed ice and top off with club soda.
Stir until well blended.

Very cool! My sister lives in Washington state and I often recieve lavender gifts from her because she always goes to the Lavender festival. I have some lavender syrup in the 'fridge right now. Thanks for the recipe!

I was too impatient to wait for my lavender to produce buds for me to make some more syrup, so I went to Penzey's and purchased a bottle.
This time I re-invented a recipe for a Lavender Honey Vanilla Syrup.
I'll have to wait until it cools before I can try it out in some tea or lemonade.

I have a huge batch of mint that I need to harvest. I think I'll make a syrup for mint tea....

... in a world where I feel so small I can't stop thinking big!

I had my eldest taste the syrup. Her comments were that it had a light lavender note with a strong and sweet honey flavor and a nice undertone note of vanilla.
