Caprielle's Corn Fritters (aka Corn Pancakes/Corn Oysters)

When I was a kid my grandmother who was from Abruzzi, Italy made corn fritters. That recipe is lost as far as I know. My daughter is making them from a recipe she found.

Mix corn (2 cups kernels frozen or fresh), milk (1/4 cup), flour (we used whole wheat-1/3cup), one egg, 1/2 teaspoon salt, 1/4 teaspoon pepper.

2 tablespoons butter, 2 tablespoons olive oil on a skillet, medium heat.

Create pancakes ; size according to taste
Cook 2-3 minutes or until brown each side.

Please let me know if you make them and how they come out. I was thinking that creamed corn might be a nice substitute

OK, so this is freaky. I was in the process of writing a post asking if anyone knew a good recipe for corn pancakes and potato pancakes.

Looks like our intrepid VU has beat me to it! I haven't got any corn in the house right now, VU, but will put that on the list for the next trip to forage @ the grocery store.

They came out great. Not sweet. I wanted to see what they would be like with confectioners sugar. Excellent! I was also interested in melting butter and adding salt-then dipping the fritters in...or with raspberry syrup...

We didn't have a lot of money when I was a kid. My Mom made these for dinner occasionally. Omit the pepper and cook them in canola oil. We had them with maple syrup. YUM.
As far as potato pancakes, Mom just flattened left over mashed potatoes and fried them. They would be good with a bit of sour cream and chives!
