Grilled sweet potatoes
My sister made these tonight and oh, are they good!
Cut small sweet potatoes(less that 4 inches long, 2 inches wide) in half, or cut large sweet potatoes into small wedges. Brush with olive oil, Sprinkle sea salt, pepper, and cinnamon on the potato. place flat side down on grill(try to put it away from the coals so that it doesn't burn) and roast until fork tender. Then brush with maple syrup, and grill a bit longer on both sides, moving the potatoes closer to the coals. and enjoy! And for those of you who grill quite often, you might have some better ideas of where to place them while they are cooking. It was the first time that she had made these, so we would both appreciate suggestions. The Groundhog lied. |

This sounds excellent! One question: Does not the maple syrup burn, even if they're on for only a couple of minutes? Reason I ask is that I put maple syrup on some pork chops in the spring and it just proved to blacken the chops. (Burnt offerings to the grilling gods, I guess.) Does the chef basically have to stand guard to keep the eruptions of flame down as the syrup drips onto the burner?

She just basted it at the last minute, and let it sit on the grill for a millisecond..I believe. They were dark, but not burned.

I thought I had posted this before, but its not here...
I hope that you are using REAL Maple syrup and not the Log Cabin-y stuff. The "fake" stuff has very little actual maple in it and is mostly HFCS. I prefer the Vermont Maple syrup that comes directly from my evaporator but any REAL maple will do. When I glaze with maple, I will take it off direct heat/ flame. It can burn quick, but you do have more time/ forgiveness when you are off direct heat. November is now MOvember. Knowledge is POWER and the Mustache is KING.
