I always use a timer or I screw them up and I have found an ice bath right after cooking let's the shells come off easier due to the fact the cold causes the cooked egg to shrink before you peel them, which is definitely SCIENCE!!

Older eggs, at least a week old, do peel better. Optimal is between 1 and 2 weeks old. Since I have chickens and get all my eggs from them, I have a carton designated for hard boiled eggs. If you're getting them from the store, there should be a date on them. That might help.

Used this cooking method also when making egg salad, but I would actually run cold water in the pot, and shock them
with enough ice cubes to stop the cooking process. Drives down the temp of the eggs, plus stops the yolk from turning green if they did get a little over cooked. Well it's really easy.
2 boiled eggs, chopped( I have an egg slicer. Sliced the peeled egg one way, turn it sideways, slice again, and it's chopped!) 1/2 stalk of celery, chopped fine. 1/4 of a small onion, chopped fine. Mayonaisse or Miracle whip, enough to moisten the ingredients(it depends on how dry or mushy you like it). This is for 1 person, increase the ingredients for more servings The Groundhog lied. Winter will continue for the next 6 months. |
