So I was sitting there wondering "how do they smoke their cheese at the store?" 3 YouTube videos later and I confidently walked up to my smoker with oak wood and several types of cheese. The key is to maximize smoke but minimize heat. even with 2 bowls of ice in the smoker you have watch the heat. One YouTube video suggested starting the smoker for 20 minutes with wood then turn it off for an hour, taste the cheese and see if you want to turn it on for another 20 minutes and leave off another hour. I recommend removing the cheese when heating the wood.

I loved the american cheese, medium cheddar, swiss and monterray jack. The blue cheese tasted great right after pulling it from the smoker but lost most of the smokiness over the next several days.

Oh, I LOVE cheese!! I'm not a big fan of smoked flavors but I will eat darn near any kind. When we visited the UK a couple of years ago, we went to Harrod's food floor and I spent almost an hour at the cheese counter. I was in heaven! I left with several nice cheese, including a lovely White Cheddar that became my favorite for the picnic lunches during train rides.

My parents were part owners of a cheese store in Las Vegas when I was a teen and I'd work there every evening and weekend. I learned a great deal about cheese during that time, laying a foundation as an amateur MaƮtre Fromager. I just discovered a wonderful cheddar from New Zealand..... nomnomnom.

Harrods! my brother-in-law worked at the kings cross location in england under al-fayed for awhile. I believe they have gone bankrupt. difficult place to work...

It has been in the last few years I have fallen for some blue cheese and parmessan blocks- I ask the waiter to give me their block when they offer to shred it- only 1 waiter has given me a chunk of parmessan like that but it was so good i will keep asking and hope for it again!

I hope you've had some Reggiano? It's pricey but once you've had it, anything else just doesn't do it for you Wink
