So I was feeling a little "creative" last night, and spied the last of the spiral cut ham we had for New years on the top shelf of the fridge. Since I was in no mood for yet another ham & cheese samdwich for lunch today, I figured I'd use it up and get rid of anything else that could be considered a 'leftover'
I know this might sound questionable, but it actually came out pretty good, and only took about 5 minutes to make! I took a 10" flour tortilla, laid a piece and a half of deli provalone on one side, and covered that with the thin strips of ham. Next, I grated some cheddar over that, just to cover everything, and rolled it up. I heated up about a tablespoon or so of olive oil in a skillet, threw that sucker on, and got it good and brown on both sides, just before the cheese started to ooze out the sides. Then I took it off the heat, grated some more cheddar on top, and gave it a good dousing of leftover salsa, with a dab of hot sauce for kick. Kind of like a breakfast burrito without the eggs...but the sweetness of the spiral cut and the spice from the salsa gave it a whole different, "happy ending"!Tongue

Corned beef hash and eggs the morning after St Padraig's. Cures the most brutal hangovers...well, not really. But at least you'll die happy.

^^^While perusing some of the older threads I came across the reason you'd decline the ol cream sauce.

If it's any consolation, I always inquire of new guests at our table whether there's something I should know prior to building the menu. I've avoided 2 huge blunders that way.

I wish more people did that: I can't tell you how many times I've had to (politely!) turn down things because someone assumed that everybody can eat this....
