For NWo.. This was a recipe from my maternal Great Grandmother
My Mom would make this when my Dad had gone hunting and gotten rabbit. However she had a rabbit shaped cake pan(like the lamb ones) and would sometimes bake the loaf in that shape. Rabbit Meatloaf 2 rabbits -deboned 1lb. Pork sausage 2 eggs 1/2 cup chopped onions 1 packaged sleeve of saltine crackers -crushed 1/2 teaspoon each of : salt, pepper, thyme Cream - a small bit might be needed to help bind the meat mixture Grind the rabbit in a meat grinder into a coarse texture. Place the rabbit, pork and remaining ingredients into a large bowl and mix well. Pat the meatloaf mixture into a greased bread loaf pan and bake @ 350 degrees for about 40-50 minutes until done. If you can't play by OUR rules take your toys and go home!!

Thanks 2Beers - I like recipes like this - all straightforward, and into the oven.
I will give it a go - although what are saltine crackers likely to be in the UK? |

We bought whole bunnies for the longest time and only used the thighs for the main dish (confit), leaving those fabulous tenders to do what we pleased. My favorite is/ was Manhattan style rabbit chowder. W/ Saffron

NWo..these are saltine crackers
http://en.wikipedia.org/wiki/Saltine_cracker You might have to use the English water crackers and then add a bit more salt to the recipe. If you can't play by OUR rules take your toys and go home!!

That sounds like a great recipe. I think the butcher shop where I buy rabbit would be willing to grind 'em up to order: I'm not sure which box I packed the meat grinder in when I hauled everything over to the storage locker....
