Same here, it should work for me as both the Girls and their Boyfriends will be around on Sunday to spend the day with us.

I agree with you, HG. Besides, most of my family has gone to Disney World for 10 days. No way RM, Katie and me can eat two pies!!

Working with OHR’s original recipe….
“About 4 to 5 cups of baking apples, peeled and sliced up into Angstrom-widths.
2 tsp lemon juice (I actually used 4 because I like how the tart cuts through the sweetness)
1 cup sugar (remember what I said about lemon juice? Well, 1 cup of sugar is your answer)
¼ cup all-purpose flour
½ tsp salt
1 tsp cinnamon (I used about 1½)
2 tbsp butter. (NOT MARGARINE. My thoughts on margarine have been made oh-so-clear in the past. I trust you were paying attention.)
1 egg yolk
1 tbsp H2O
2 prepared pie shells

Toss apple slices with lemon juice. Lemon juice helps the fruit from turning brown. Combine sugar, flour, salt, then add applies. Toss briskly. Pour onto crust. Add dabs of butter here and there. Put 2nd pie crust on top, slice here and there to allow steam to escape.

Beat egg and water, brush mixture on top crust.

Bake at 425 for 15 minutes, then reduce heat to 350 and bake for 40 minutes. Use the colour of the top crust to guide your baking time. It should be nicely browned.

Remove from oven. DO NOT EAT RIGHT AWAY lest you need treatment at the local burn unit. Let stand for at least one hour. Trust me on this, k?

Enjoy with real vanilla ice cream. Very, very tasty.”


I came up with this…

Salted Carmel Apple Pie
4 to 5 baking apples, peeled and sliced
1 T lemon juice
1 cup BROWN sugar
¼ cup all-purpose flour
½ tsp COARSE SEA SALT
11/2 t cinnamon
2 T butter.
1 egg yolk
1 tbsp H2O
2 prepared pie shells
Preheat oven to 425 degrees.
Combine apples, lemon juice, brown sugar, flour, sea salt, cinnamon in a bowl and lightly mix/toss to combine. In a large frying pan melt butter over medium/low heat and add the filling ingredience. Saute for 3 to 5 minutes until a glaze forms. Remove from heat.
Pour filling into crust and top with additional crust. Crinp edges and cut vents in top crust. Apply egg wash to crust.

In a small bowl combine…
½ t Coarse Sea Salt
1 t Cinnamon
1 T Brown Sugar
Mix together and lightly sprinkle on top crust.
Bake at 425 for 15 minutes and then reduce heat to 350 and bake for an additional 40 minutes.
Same heat advisory still stands, don’t burn your mouth! Big Grin
My hope is you find this the same taste combination as the Salted Carmel ice cream and coffee drinks that are so popular now. Both pies are sitting on the counter as I type and I hopefully will find enough tasters to give me opinions tomorrow…

Thanks Scythe! Blush I do have to admit, early taste tests are going for OHR's pie! Its a good, easy recipe! If you do EXACTLY what he says your going to have a good pie!

        well I said I/we would participate and here it is! First one is OHRs and the second one only difference is we/ Lorna made the crust from scratch! Yummers!

Usually when I roll one out I end up piecing it together, and it ends up looking like a crazy quilt! Big Grin
